Hi! 

We’re Mike and Pam Lawton, the husband-and-wife team behind Coffee Cabin Express, a cozy coffee trailer located right here in Cottage Grove.  years, we dreamed of building a business together—and now, we’re serving up great coffee, tasty treats, and warm smiles to our community.

Mike is an Air Force veteran and lifelong entrepreneur who’s owned three successful retail businesses. Pam has a background in human resources and organizational management and is looking forward to joining the coffee trailer full-time soon. We've been married for 22 years and share a blended family of four grown kids and six wonderful grandkids—family is everything to us.

After moving from the La Crosse area to Woodbury in 2013, we fell in love with Cottage Grove and made it home in 2020. We saw a need for a locally owned coffee spot with heart, where customers feel like part of the family—even when grabbing coffee on the go.

Our menu features hot and cold espresso drinks, flavored coffees, teas, Lotus plant-based energy drinks, smoothies, and Bridgeman’s ice cream (plus shakes and malts!). We also serve French pastries, breakfast sandwiches, soups, and wraps—something for every craving.

We may be a stationary trailer, but we love popping up at special events now and then. And in the summer, we plan to offer outdoor seating so you can sip, relax, and connect.
